The Best Blueberry Muffins ever!

So as i browsed through endless recipes for blueberry muffins I really love, I ended up with this...
To Die for Blueberry Muffins
Batter Ingredients:
3 cups flour
1 1/2 cup white sugar
1 tsp salt 
4 tsp baking powder
2/3 cup vegetable oil
2 eggs
2/3 cup milk
2 cups fresh blueberries
1 cup white sugar
2/3 cup flour
1/2 cup cubed butter
3 tsp ground cinnamon

This batch makes 16 large muffins, which is twice the amount of the original recipe. I just doubled all the ingredients because I do love this recipe so much and felt that more is better!

all about the basics (cookies)

This is one of those basic cookie recipes that you can basically change the flavor of. Instead of putting chocolate chips into the batter, which I ran out of, I used M&Ms for half of the batch and used white chocolate chips and walnuts for the rest of the batch.
M&M and White Chocolate Walnut Cookies
(Makes 20-24)

1/2 cup softened butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cups all-purpose flour
M&Ms, white chocolate chips, walnuts...
(basically whatever you want on the cookies)

Again, I usually opt for chocolate chips, or dark chocolate chips, but i ran out -__-

Anyway... directions... Mix softened butter with sugars. Whisk in the egg, vanilla extract, baking soda, and salt. Then add in the flour. (TIP: it's a habit of mine to sift my flour before i use it, but you don't have to) Last, just add in your toppings...

Let batter sit for about 10 minutes to stiffen. Then scoop tablespoon-sized portions onto baking sheet. Leave some room for the cookies to expand. Bake for 10 minutes at 350 F.
 10 minutes later...
TIP: to make the cookies uniformly round, I use a small tablespoon-size cookie scoop that I got as a gift from my secret santa this past Christmas...

Dark Chocolate Chip Coffee Cookies

i've recently fancied creating and baking homemade cookies. i decided to make some earlier today and enjoyed every minute of it, especially the tasting part!

Dark Chocolate Chip Coffee Cookies Recipe
(makes 2 dozen)

1/2 cup softened unsalted butter
2 tbsp instant coffee granules
2 cups flour
1/2 tsp baking soda
1/2 teaspoon salt
1 cup firmly packed brown sugar
1/2 cup regular sugar
1 large egg + 1 egg yolk
 dark chocolate chips

Heat butter and coffee granules in a small saucepan until coffee dissolves in the melted butter. Set aside to cool. Combine flour, baking soda, and salt. Set aside. Mix butter mixture, sugars, and eggs in a large bowl.
Add dry ingredients, and mix just until blended using an electric mixer. Then add dark chocolate chips using a rubber spatula or spoon. It should look something like this after...
...a giant ball of cookie dough!

Once you have all the ingredients incorporated, just scoop tablespoon-sized cookie dough onto your baking sheet. Bake at 325 F, for about 10 minutes, or until edges are starting to golden. (Do not over-bake)

They should come out smelling and tasting delicious =)
